If you want to set up the day before, there is a good chance the balloons will already be slightly saggy before the guests arrive. Second: arranging a helium tank, filling, returning — extra logistical stress on an already busy day. Third: helium is a finite resource also needed for medical equipment (MRI) — using it for party decorations is increasingly controversial.
